BISCUITS

Heat the oven to 450 degrees and make sure the rack is in the middle of the oven. Stir two cups self raising flour with 1 & 1/2 cups heavy cream until you have a nice dough. Dump the dough out onto a cookie sheet and with a little bit of flour sprinkled on top, pat it into a rectangle. Take a metal spatula and in a up and down motion, cut the dough into squares. If you use a knife and saw through the dough, the biscuits won’t rise well. Sure, you could roll out the dough on the counter, making a mess in the process if you like. Otherwise, once you’ve got a checkerboard of squares, slide the pan into the preheated oven and get out the butter and jam. After about 15 minutes, they should be a golden brown. Take them out and let them ‘soak’. This means putting a clean dish towel over them for just a few minutes to let the steam settle inside.
